I brew by yuuki-cha's recommendations since it's where I got the teapot I posted and the tea.
That said, a lot of tea at lower temps for short brews is the norm for Japanese tea.
If you get it from yuuki-cha, try getting it in spring or late summer for the best tea.

When I was a kid I rode my bike to school in all weather. One winter I had to stay after for a club, I was riding home in January after there'd been a ton of snow already. The alley that I had to go through before I got home had like a 4 inch thick sheet of ice covering it, I could see my house when I hit a really slick patch and went down. my ankle got caught between one of the tubes and the crankset and I really felt like I couldn't get up. My mom had the fireplace going and the smoke was wafting my way, intermingled with the smoke I smelled a hint of chili and cornbread. Since then I've always loved chili and cornbread in the freezing ass cold days of january/february.

Fair enough, but there are very few absolutes in bread, there is always an exception, even with leavening you can skip it all and use just salt and make the wonderful and weird salt rising bread. I do not make much for high hydration these days, I have abit of a thing for the dense ryes and wheats. No need to argue in bread threads, we can discuss instead.

I would say we are both abit biased towards our methods, but I did not read the previous threads carefully!

I thought the reference to stretch and fold was in reference to the no knead since I have seen multiple no need recipes which do abit of stretch and fold with the spoon, hence my saying, only slightly better.

Do you have any experience with the Rubaud technique for kneading, rather than stretch and fold? I mostly use that, though I admit it's been a while since I did stretch and fold. It'd be interesting to see a comparison of 20min of one vs the other and how the dough looked afterwards

I used to be addicted to Ambien. I would take up to 10 a day, was prescribed 7 a day legally by one doctor at one point. This went on from about age 17-29. I've been using medical marijuana for the past few years, I know the medical designation is a bit of a meme but it fucks me up less than Ambien.

Anyways I used to cook a lot as a kid. I didn't have a lot of friends so I would make pies, cookies, cakes, stews, fairly adventurous stuff for a pre-teen and teen. When I got into drugs, I essentially stopped really cooking and moved to paper plates (still saving up for real ones) and ate mostly frozen, pre-packaged food. It is SUCH a comfort making food now.

Since I got pseudo-sober (just weed) a little over a year ago I can actually cook. Even basic meals get better every time I make them. It is sort of like learning for the first time in that I just didn't develop any skills for the past decade and worried if I had forgotten them.

Just made french bread pizza. Simple stuff, but not something I used to do. Went to the farmer's market yesterday in the snow to get some ingredients. Again, nothing miraculous or really to brag about, but for me these are things I didn't used to do.

Hey /ck/

I'm normally over at /fit/ but I'd like to pick your brains about something. I recently got a Breville smart convection oven and I would like to take a crack at making some jerky (beef/chicken/turkey).

Any recipes that you would recommend?
Is there anything speicifc I have to do to have more moist jerky instead of something super dry?
I'm trying to aim for low carb/high fat/protein (part of a keto diet)

I appreciate you suggestions.

fellow fitfag here, beef jerky isnt actually that great for keto. For jerky to be reasonably tasty, there is a good amount of marinading that happens. It's rare for there to be no added carbs. Another point, is that when entering ketosis, the higher fat|protein ratio is better. Too many people make the mistake of going high protein and not being able to enter ketosis as excess protein can be converted to glucose. If youre dead set on making beef jerky, most marinates are pretty carby.

This is enough to make 3lbs, i use rump roast and ask the butcher to cut it as thin as possible but not too thin that light shows through. Like around 2mm. For drying it takes about 12 hours in mine but i like it pretty damn dry, but since you have the oven idk on the time you will have to figure that out.
