It's not like hardening it and tempering is a particularly difficult process if you already have the materials to be knife making in the first place.

Each manufacturer probably has their own treatments for various steels and even the same steels so if you're trying to replicate a consistent result, you don't really learn anything from your own efforts.The biggie though is, you place the metal under stress, while its hardened + tempered by grinding on it, the metal will form fractures and differential heats over various efforts of beating on it with grinders, sanders, etc that will knock some of that hardness out, leaving you with softer and harder sections.15N20 is a really nice steel, it gets insanely fucking sharp and its damn tough, not so great corrosion resistance. However, you do need to anneal it before working, at least two normalisation cycles at 750-800C to air cooled. Then quench it in warm oil or it'll typically warp like crazy.I tend to quench for 10 seconds, then air-harden it between two slabs of aluminium in a vice to knock out any warps, bends and wiggles
