Daring Bakers February 2009: Valentino Flourless Chocolate Cake

First, the obligatory paragraph for the blog checking program (I would change that semi-colon and the “we” — I would use a “they” instead, since I’m not one of the people who actually picked the challenge, but then the blog checker might not find it, so here you go):

The February 2009 challenge is hosted by Wendy of WMPE’s blog and Dharm of Dad ~ Baker & Chef. We have chosen a Chocolate Valentino cake by Chef Wan; a Vanilla Ice Cream recipe from Dharm and a Vanilla Ice Cream recipe from Wendy as the challenge.

Actually, I had made flourless cakes before. My standard recipe is quite similar, but a little bit less dense, so I was looking forward to trying this one to see how they compare. You can find a post of my flourless cake on my blog here, although it looks like I never got around to posting the recipe (I’ll do that later today or tomorrow).

My recipe uses less chococolate, one more egg, less butter and a tiny bit of sugar, but it’s basically the same idea.

Here you have the photo comparision. My cake:

And this month’s challenge:

And the plated photo of this month’s challenge:

The recipe can be found on this month’s hosts’ blogs.

As the challenge was similar to what I’d done before, this wasn’t very difficult. I used Callebaut 70.4% chocolate, because I like things dark, and because that’s what I had at home (I bake with it a lot, so I buy it in big bricks).

The comparision: I like mine better, because it’s less dense, and I like the texture better. Also, I think that because this one had so much more chocolate, it became a little too intense in chocolate taste (well, can you ever have too much chocolate?), whereas mine is still really really chocolatey, but a bit less intense, even done with the same chocolate. This one I liked best within a couple of hours of it coming out of the oven, and after that I had put it in the fridge.. even after I warmed it up, it was too dense after that and I didn’t like it as much.

Now for the ice cream: Although the blog checker paragraph says that the challenge included ice cream recipes from each host, in reality we were allowed to choose whatever ice cream recipe we wanted, or even not use ice cream at all (esp for vegans). I made two ice cream recipes from icecreamireland.com; Chocolate Chip Banana ice cream and Chocolate Chip Mint ice cream. I love Ice Cream Ireland recipes (I had tried them before) because of their richness. Yum for custardy ice creams! These have egg yolks and cream and all sorts of richnesses in it. I personally loved the mint one best, though the banana ice cream was great too. Compared to when I was in Korea, my ice cream bowls that I put in the freezer were a bit deeper, which was a mistake, I think.. the ice cream came out slightly crystalized, whereas it hadn’t when I made it in Korea. Anyway, it was still very tasty. Here’s one more photo highlighting the yummy ice cream:

And that’s it! As usual, check out the other Daring Bakers’ posts here and the Daring Baker forum here.

Happy munching!

Back in Korea

So I’m back in Korea, and I’m settling in. I have a nice apartment, though it’s a little further out that I thought it would be, and I’m still setting things up. Seems I need so many things! I’m still waiting for some things from my school (a desk and also any plate that doesn’t look like it’s made for a 5 year old — the one they gave us is one of those plates that are divided into different compartments to hold different foods and decorated with cutesy designs. I’ll post a picture of it later cause it’s pretty funny), and I’m slowly buying things that I need either from stores or from teachers who are leaving Korea.

I am sadly still without a phone. I need my Alien Registration Card to activate the service on my old phone, and to do that I need a medical check for immigration and some documents from my school. I should have the results from the medical test on Friday, so by Monday I should be able to start some semblance of a social life. Setting up internet would need my ARC too, but luckily there seem to be a few unlocked internet connections. They’re not really reliable, but at least I have some internet now.

I’ve gone out dancing and met some of my swing dance friends. I’ve already managed to lose my dance shoes once and then find them again — I forgot my dance shoes at Time Bar on Sunday, and then found them there when I went back on Tuesday (I was slightly worried I had lost them on the metro or on the way there). With the exception of Saturday (fell asleep at 6pm.. stupid jetlag) and tonight (just feeling lazy), I’ve been out dancing every night that I’ve been back. 4 nights out of 6 so far.. not so bad.

I am now officially at war with the ajosshi who lives across the hallway from me. It’s a longish story, but here we go:

This ajosshi lives in the officetel across the hall from me and has this habit of going to the end of the hallway a little away from his door (but right near mine) and sitting there on this chair and smoking. The smell comes right into my apartment. After a day of this, I decided to go and ask him to stop smoking there. I’m pretty sure he’s not allowed to smoke in the building like that. So he’s very apologetic, and says he won’t smoke there anymore.

Fast forward a day, he’s there smoking again. I ask him again to not smoke there, and he says I know, I know. I’m sorry, I won’t smoke here.

This continues to happen, so the next time I smell smoke, I go out and he’s just gone back into his apartment. I happen to meet the ajumma who lives next door to me and she was wondering why I was in the hallway in my pyjamas, so I explained to her the story and said that I smelled smoke again, and that the adjosshi just went back into his apartment. So she drags me over to his door, rings the bell and tells him off for me. He says he’s sorry and that it won’t happen again.

So he’s still smoking outside there. I’ve talked to him at least three times now, I’ve kept throwing out his paper cups that he uses as ash trays that he leaves on the window sill. I’ve been considering moving that stupid chair (it’s a big square cushiony one that belongs to the building), but I thought that since it belongs to the building it’s probably not supposed to be moved.

The smoke really irritates me and I’m sure he shouldn’t be smoking there. I asked and he’s really not supposed to be smoking there at all. I think he’s just lazy to go out AND doesn’t want the smoke smell in his apartment. How nice, then, that he doesn’t care that I don’t want mine smelling of smoke either.

My next line of attack is going to be moving the chair he sits on and putting up a no smoking sign in Korean. If that doesn’t work, every time I see his paper cup/ashtrays that he leaves on the window sill, I’m going to ring his door bell and hand it to him and tell him off. He’ll eventually go somewhere else. Any other solutions are welcome.

So that’s my week in Korea in a nutshell.
