Merry Christmas

The last few three days have been a blur. Much cooking, caroling, a pig roast complete with sweat lodge and a magnificent bonfire, and many toasts have been made. I’m at a loss for words but here are a few pics.

Whaddya Eating?

I’ve been neglecting this blog lately due to the usual holiday obligations. I have grand plans on re-designing the template but life keeps getting in the way. I promise more posts will come as the pace slows.
Highlights of the past 2 weeks include:

  • Q graduating as valedictorian of his college
  • wild dancing and an open bar at the department holiday party
  • a wonderful mad baking frenzy from 3:30pm to 1:00am one Saturday, of which the previous two posts are products of
  • drunken debauchery from the upstairs neighbors 2 weekday nights in a row which resulted in me calling the police for assistance. Because they didn’t invite me😦
  • consumption of many (cholesterol rocket) pretzel dogs at the mall
  • the discovery of the awesome Chicken Ranch Pizza from a pizzeria that delivers

The traffic on the blog has been slow but I see there are a few new people.

The gist of the Whaddya Eating posts is simple: Tell me what you’re eating. Leave a comment about anything that has to with your recent meals. I love it when people post recipes, restaurant reviews, food trivia…it’s all good! So do share.

Survey says that the average American has the attention span of 7 minutes to concentrate soley on one activity. Making these marshmallows with a hand-held mixer is a great way to test that statistic.

If you have a stand mixer, I envy you. Of all the things I’ve ever made, marshmallows really try my patience because I’m forced to stand relatively still for 10 minutes with both hands occupied. For someone with a 30 second attention span, this is quite daunting. But the results are worthwhile.

Toasted Coconut Marshmallows

14 oz. sweetened coconut flakes

3 packages of unflavored gelatin

1/2 c. cold water

1.5 c. sugar

1c. light corn syrup

1/4 tsp. salt

1 tsp. vanilla

confectioners sugar

beer in a tall sturdy stein*

a good long straw (omit if you have a fancy stand mixer)

Pre-line a cake pan or casserole dish with a sheet of wax or parchment paper so that the bottom is completely covered. Dust with the powdered sugar. If you want really thick marshmallows use a square dish.

First, toast the coconut in a dry pan over a low flame, stirring often. It should take about 5-8 minutes. Sprinkle half of the toasted flakes on the bottom of the pre-lined baking pan.

In a large bowl, bloom the gelatin in the water and set aside. It should get really thick and look completely solid.

Combine the sugar, corn syrup, and salt in a saucepan and cook over medium heat until it boils and reaches 24oF on a candy thermometer.

Stand Mixer: Set the paddle on low speed, stirring the dissolved gelatin and slowly add the boiled sugar mixture. Turn the speed to high and let it whip for 15 minutes until very thick and gooey. Enjoy your freedom. Turn off the mixer, add the vanilla, and turn back on for a few seconds to mix it in.

Hand Held Mixer: Insert long straw into beer and keep it at a working distance where you can bend your head down without taking your hands off the mixer and bowl. With the beaters on low speed, stir the dissolved gelatin and slowly add the boiled syrup. Turn the speed up to high and stir in a circular motion. Keep at it for 15 minutes. Fantasize about owning a stand mixer and calculate what needs to be cut from your budget to afford one. I can only keep this up for 3 minutes, the next 12 are spent trying to bend sideways to reach that straw without interrupting the nice circular pattern of the beaters. At the very last 30 seconds, add the vanilla, making sure it gets mixed in well.

Pour over the coconut flakes in the cake pan. A rubber spatula is recommended, its very sticky work. Evenly sprinkle the remaining toasted flakes. Leave the pan out, uncovered overnight or at least 6 hours. A little trick when you cut them, use lots and lots of confectioner’s sugar.

*I hear Target is selling wine in juice boxes these days, this is good too, just as long as there’s a straw for reaching.

Cranberry Pistachio Biscotti

Biscotti Jenga anyone?

How to Make

1 1/2 dried cranberries

2 1/2 . flour

1 c. sugar

1/2 tsp. baking soda

1/2 tsp. baking powder

3 eggs, broken into a small bowl

1 tsp. vanilla extract

1 c. shelled green (un-dyed) pistachios

1 egg wash (1 egg beaten with 1 tbsp. water)

Steep the cranberries in boiling water for 10 minutes, drain and set aside. Pre-grease or Pam-spram a large cookie sheet.

Sift the sugar, flour, baking soda and powder together in a large bowl. One at a time, add the pre-broken eggs to the mix and the vanilla stirring well. Add the drained cranberries and pistachios.

Form 3 logs (12×3) , spaced 3 inches apart, on the pre-greased/pre-sprayed cookie sheet. Brush with the egg wash.

Bake at 325F for 25-30 minutes.

When they’re cooled, cut vertically. Try to make them perfectly even, they stack better that way.

Madly in love

Ina Garten is as warm and personable in the flesh as she is on her show. I only had seconds with her and then had to move on but I stayed off to the side for 15 minutes and watched her greet the other fans. There were nearly 400 people present at the book signing, resulting in a very long wait in a line that snaked across 3 floors. I waited for 2 1/2 hours but to me it was worth it. It was very touching to see people patiently waiting and even enjoying themselves. It was the largest planned meet-the-artist event I’ve been to and definitely the best controlled. The staff of the store hosting it all were terrific, they kept the flow of traffic to a T. I didn’t see any ugliness that can come with such large gatherings and the way the line bowed and folded into itself there was plenty of people watching opportunities. It was also very nice to see the number of teenagers and the under-25 crowd present. And they say kids these days are lazy MTV wannabes. One 15-year-old girl told The Contessa that she was her role model and that she wanted to be just as glamourous as her someday.

It’ s so refreshing to see all this admiration going to someone so unaffected, so unpretentious, and un-gimmicky. If she had found the ogling crowd annoying or tedious, she did not show it at all. As on her show, she gave off an aura of calm and warmth. That’s why we love her.
