I think several folks have proven that pan sear doesnt actually seal any juices in.

The biggest benefit of reverse sear is that the oven evaporates all the water moisture off of the surface which guarantees a better sear.

Water-wet meat in a hot pan = steam = gray meat.

You want it to brown because brown = flavor.

Just make sure your flame isn't too high because it will burn that puppy fast. Even a low flame will flare up plenty from all the steak juices.

Oven at 230 for 20min each side. Charred up on a cast iron grate over a chimney starter. Then sweetened up with some butter in a cast iron pan.

It's got the buttery crust from the pan + the char from an open flame. This was my first time trying this method but I'm already in love with it.

I mentioned her annoying voice at work and everyone gasped like I said something sexist. And then I had to listen to this rhetoric:

"Nobody ever complained about Obamas voice or Mitt Romney's voice. Hillary is only getting this treatment because she's a woman."

So I said:

"Obama and Mitt Romney are way more charismatic than Hillary. It's just that simple. Hillary is not charismatic. Michelle Obama is charismatic as fuck. Arguably more charismatic than Barack... And let's be honest, we all made fun of George W's voice for the entire 8 years he was in office."

Crickets...

Edit: One more thought. I actually think she's pretty easy to listen to when she's talking at regular volume, like at the Benghazi hearings. But during her big grandiose wannabe-Obama speeches, she starts hitting those unpleasant frequencies.
