Nazareth: 1 day tour to the jewel of the Galilee.
Nazareth is one of the oldest capitols in Israel.
Populated with 30% Christians and 70% Muslims, is an Arab city with a heritage that can be adored, when meeting the locals.
this 1 day journey was held by one of the finest culinary tour guides in Israel, Mr. Gil Lahav.
Gil knows a lot of food, maybe too much for most of us, as when he speaks about food and the hands that makes it, he speaks from his heart.
i can adore a person like that.
but not only me:
every stop, and each one of the people we met on our way, has gave Gil the respect and appreciation, that only a true person deserve.


so...
the day started in the Humus shrine #humus_ayad. when we dipped into a foamy, creamy humus plates with a taste can not be found.
followed with a local butchery of fine Balady  lambs, and off we go to the place where healthy smiles are made from: yes... the #TAHINI #ALARZ.
At this plant the owners (and an amazing woman) of the alarz tahini has greeted us with a private tour, and showing us how the sesame seeds that made their way from Ethiopia, formatting their shape and taste to a liquid, all natural, all Yummy paste.
Sipping a hot & fresh tahini directly from the grinder, is like nothing i ever tasted before.
OK, so... there's something unique in this city.  
and it's familiarity with the rustic, nature based cites in Europe for instance,  is the presence of the Balady.
Baladi is a term of "native", "out of the soil", natural cultivated.
the Israeli land has a rich history of natural food ingridiants, that can be found also in the bible. in some places, you can still enjoy the freshly harvested ingredients that maybe doesn't look as nice as the fruits and vegs, in the convenient-store, but the scents and tastes, are out of this world.

 
so, combining Balady food ingredients with artisan hands,  is the only way to enjoy this wondrous journey to a city that never stopped.
 
 at that point. we were heading to the old city of nazareth, 
a Christmas tree welcomed us, with it's height and glamour, as it's citizens. 
a quick stop to a local coffee shop, and the journey has taken its second part. 
in a small bakery, a local pastry filled with spinach and some secret herbs, has opened a new point of view to the meaning of "artisan" , of heritage cooking.
in the Tishrin  restaurant, we have found not only a pleasant place for a drink, but a magical atmosphere and fine fine food (especially the lamb chops from the taboon oven).
i truly cannot remember all the places we have stopped on the way, just that every place was so unique and wonderful, that spending a couple of hours in each and one of them, should be a must.
but the Daween Al-Saraya is a place that stood from them all:
at that point, we came to sample as local Muslim dessert, that usually served at the Ramadan festive, the Ktayef (sorry if misspelled), a sweet pastry filled with goat cheese and sweated from the outside. tasting this, so like first time eating this dessert. wow. just wow.
but the uniqueness of this place, is it's owners, a true simple, pleasant, funny and maybe the smartest man alive. 
his formula is: no mobile, no computers, not having it all, just doing few thing, day by day, and doing them as best as he can. this is happiness, this is how living life and enjoying them looks like :)  

third part of the day:
an early dinner at the one and only #diana restaurant, the it's master magician, (or chef if you like..), Duchul. 
a long and symbiotic Finish, when the motives of:  Baladi , artisan craftsmanship, rustic and a good taste coming along all together to a splendor in the mouth, eyes and hands (yes, you must touch this food, as it's going to slip away the moment you take your eyes off it..).
