Most people have eaten a jelly filled doughnut at some point in thei...r lives. Most of us would associate it with American cuisine. But these jam filled doughnuts have a long and complex history that began somewhere in the Middle East and developed in Europe before it became a classic American dessert. It was the Dutch who brought doughnuts to America in the 1800s. They were unappetisingly called Oilykoek or fried cake.
The word doughnut was first coined in the early 1800s but the word donut was used in print only a century later.
They are popular during the Jewish holiday of Hanukah (Dec 12-20 2017) and are also called Sufganiyah or soufganiyot in Hebrew. There are many versions of these doughnuts all over the world where Jewish communities had adapted existing fried foods like Moroccan Sfenz, Russian ponchik, German Berliner and the Boston Cream doughnut with their own Yiddish ponchkes.
Jews prepare fried foods at this time of year to commemorate the re-dedication of the second Temple after the Maccabees had driven the forces of Antiochus IV out and discovered that all the temple oil had been desecrated and only a single container of sacred oil remained.

Interestingly, it is also one among a few theories that it was the persecution of the Jews by Antiochus IV Epiphanes also called Epimanes (meaning mad in Greek for his capricious behaviour) that brought the first Jewish settlers to India. They settled in Cranganore, near Cochin now known as Kodungallur in Kerala in 68 CE.
But you can make these doughnuts anytime you like. They are so soft and delicious you can fill them with custard or glaze with chocolate. Use the basic raised doughnut recipe I've provided, adapted to India's humid climate and flour type and then pipe the round doughnuts with jam.
Use a good quality jam in any flavor you like to fill these fluffy clouds and then float away into blizzzzzz.
