Gringas (Spanish pronunciation: [ˈɡɾiŋɡas], feminine form of gringo) are a variety of tacos which consist of a flour tortilla filled with cheese, al pastor, and pineapple.[1][2] This is then grilled in the same manner as a quesadilla. The origin of the name gringas is unclear. Some attribute the name to the use of white flour tortillas.[3]
