I agree completely! However, in some ways it can involve a lot of memorization and seems pretty overwhelming for a lot of people.
I think part of it is that a lot of people are required to take organic chemistry for programs that don't really rely on it all that much. For example, biology, neuroscience, health science, environmental, etc. programs at my school all require organic chemistry, and the students in those programs aren't always that interested in the subject matter.
