I’ve tried this my steak gets super blackened too quick and the inside doesn’t cook. I like my steaks med-rare and have even tried it on medium on the stove and gotten the same results. Suggestions?
Heat your skillet to about medium-high heat, a little more on the “high” side. Pre-heat your oven to 400. Take 3-4 peeled cloves of garlic and smash them lightly with the flat side of a knife or something hard.
Toss a bit of butter in the skillet to coat it and drop in the steaks. They should sizzle hard... cook them on each side for about 5 minutes to give it a good sear. Flip it once and toss in more butter, the cloves of garlic around the steak and a couple of branches of rosemary on top of each steak. With about 1 minute left on the 2nd side, baste the steaks with the butter in the bottom of the pan.
Take the steaks and throw them into the oven for 7-8 minutes for a medium rare. Take them out and immediately take them out of the pan. Let the steaks rest for 5 minutes and cut into them.
Best steaks you’ll have.
