Shouldn't need to do anything special. PHP 7 is remarkably backwards compatible with PHP 5 (for a major version bump). "How" depends on your distro, but it should be pretty simple...

Officially 5.6 is planned to EOL on Dec 31 2018. Longer than typical support, but as the last PHP 5, that made sense. In theory there actually COULD be another PHP 5.6 release yet. Oddly, 7.0 EOL'd last Monday (3 days was "close enough") so it won't have more releases for sure.
