The instruments have passed all their environmental and cryogenic tests and are working as required. The IRB only mentioned instrument removal as a hypothetical issue when they discussed their schedule assessment.

We did environmental testing at NASA Goddard (vibration and acoustic) to ensure the mirrors could survive a rocket launch. More here: Video here:

Not sure about future GalaxyZoo projects, but raw data from it will be largely public like Hubble's is and will be archived here: (You'll need tools to process the raw data.)

Very very small from anything big - space is very big and comparably empty. Micrometeoroids we do expect, but will have negligible effect on the mirrors. More on that here:
