For the moment it is possible to make queries to fusion tables with only the WHERE clause, but it would be very useful to extend this possibility also to GROUP BY and ORDER BY.

orderBy property is now on FusionTablesQuery:
https://developers.google.com/maps/documentation/javascript/reference#FusionTablesQuery

Please file a new feature request for groupBy, explaining your use case.
