About
Welcome to my food blog, The Spiffy Cookie!
My name is Erin. I am 33, am a PhD researcher in Microbiology, and a lover of food. I cook/bake almost every day and love trying out new recipes, to the point where I rarely make the exact same thing twice (much to people’s dismay). Family and friends always complain that I am making them fat with leftovers that I share, yet they also complain when they don’t get any!
I try to put a slightly healthier edge on food when possible. But sometimes I just have to listen to my inner fat-kid and stuff delicious things into cookies, cupcakes, burgers, pizza crusts, etc. So you can expect to find a good balance between healthy and gluttonous options. Yes this blog is more than just cookies!
My favorite food group is dessert. Even after a extremely filling dinner I will suddenly have room for dessert once it appears. Sometimes I purposely plan what I eat for dinner around what I want for dessert.
Peanut Butter + Chocolate = one of the best combinations ever.
I was born in Plano, TX. Moved to Rochester, NY when I was very young and lived there until I went to The Ohio State University in Columbus, OH for my B.S. in Molecular Genetics (2003-2007). Since I apparently felt as though I hadn’t had enough education, I went straight to graduate school at The University of Tennessee Health Science Center in Memphis, TN (2007-2014). After graduating I acquired a job back at good ol’ Ohio State doing research. Somehow I am still coffee-free after all that schooling.
I also love to work out and do crafty things. You will find me regularly at the gym doing cardio, weight lifting, or a group fitness class such as spin, core, pilates, or yoga. I also love to paint with acrylic on canvas, or paint ceramic plates/bowls/mugs/etc (hello food props). With my recent move I have expanded my craftiness to other home decor items which you can now find in the “DIY” section of this blog.
Feel free to contact me at [email protected]. I’d love to hear your comments and questions!

Thank you! I’m glad you found me too 🙂
Wait, I didn’t know you grew up in upstate NY! I am from Oswego.
Cool I didn’t know you were from Oswego! I miss upstate a lot, especially during spring/summer/fall. Summers here in Memphis are too long and hot, and spring/falls are too short.
The cookie is soooo cute! How did you make something like that? I want to decorate my website a lot….
I am always amazed when I go thru your website. You really did a great job!
Thanks, Dad!
You’ve got so many deliciously tasty looking eats 😀 Great blog, happy I stumbled upon it!

Nice to meet you. I, too, am a scientist who loves baking. I paid much of my medical school tuition at USC (the university of spoiled children—in CALIFORNIA, not south carolina) baking cheesecakes and other goodies. Cheesecakes gave me the best return on my investment of time and resources (ok, over-educated geek with degrees in biochemistry/molecular bio, economics, and….music as well as medicine.) My hubs was a science geek, too, getting his PhD at CalTech while I was at USC Med. We lived less than 3 miles from the original Trader Joe’s in South Pasadena and always came back with obscure items that turned out uniformly delicious. What seemed odd at the time is almost pedestrian. Even TJ’s are almost a national brand.
Now retired (early, yippee!) most of my baked goodies go to neighbors and the health club. Believe it or not, if I place a tray of whatever size near the coffee machine, the plate is totally empty before a one hour class is over. Many have learned to grab a piece and put it aside before their workout which seems to totally justify eating empty calories after working out their heart and other muscles, lol. My grown sons are engineers for NASCAR teams near Charlotte and also appreciate any care packages despite being married to lovely southern gals.
Thanks for letting me prattle on. I’m off to make the candied walnuts this afternoon despite the 100 degree northern CA heat. Then tomorrow back to canning berry pie filling, peaches, and raspberry freezer jam.
super awesome Erin :). I’ve added you to my RSS!

I think you are my new favorite blog! I love the energy you put into every post. I wish I had that in my very fresh/green/young blog.
I also read that you don’t like Meatloaf. I think you should try my recipe I have posted on my blog. It’s the only meatloaf I will eat!
Aw thank you! I will definitely check out that meatloaf of yours 🙂
I love your blog! I just found it through your comment on another blog I visited and I’ve since been following you. Mainly because after I read your ‘About’ page I could relate. I am a 4th year Phd Student in Biomedical sciences as well and I started my blog this year after spending lots of time cooking and baking the past year. Again, I love your blog and can totally relate!
PS: My labmates have a love/hate relationship with my left over goods too lol!

OH-IO fellow OSU alumni! Looks like we were there around the same timeish. I moved to MD 2 years ago and still miss Cbus every single day.
Yay fellow buckeye alum!! I was there from 2003-2007 but recently moved back after finishing my PhD in TN. I definitely missed it and am so glad to be back! Except for this whole winter weather thing…
Great to meet you yesterday at the #ConesForTheCure Event! I love your blog and look forward to your newsletter.

I just found your blog for the first time. I think I will love your recipes because our food likes and dislikes are almost identical! We must be cooking kindred spirits. I will enjoy trying your Recipes! Especially the peanut butter chocolate ones! I think understanding the sciences can truly improve your cooking- it’s all a bit of Chemistry, isn’t it?
