This delicacy is usually made and eaten at most Trini limes(hanging out with friends). It's great for cutting the alcohol or curing a hangover. As +Chris De La Rosa​​ pointed out, this dish is usually made with various parts of the pig's head and feet. However, this version is for those of us who don't eat pork. Bon Appétit!

Bhagi Rice with Chicken
+Taste of Trini and Batman put a twist on a Trini favorite - Bhagi Rice with Pigtail. For those of you wondering what the heck is Bhagi, it's the Hindi word for mixed 'vegetables'.
The green leafy vegetable used in this dish is Taro root leaves(https://goo.gl/ck5sfw) or 'dasheen bush' as she referred to it. This leaf is also used in making the delicious Callaloo dish (https://goo.gl/QAvAMu).

Paramin, T&T's Breadbasket
This vibrant village is located on one of the highest points of western area of the Northern Range in Trinidad, Trinidad and Tobago. It also is part of the Maraval area where I currently live.
The soil in this region is extremely fertile and the most of the people, in the area, grow an assortment of fruits, herbs (most of our chives, culantro, thyme, and oregano are grown there), and vegetables. If you ever come to Trinidad, Paramin is a must place to visit and explore.
