Part 2/3 #MatzahMadness. Another #Pesach recipe from #JewishCare to share with our community! Getting the best of both worlds with Matzah Brei done two ways - sweet & salty! Who said Pesach recipes can't be both simple and tasty? When you're stuck for some ideas this one will have you covered for breakfast, lunch and dessert! The savoury part had onions, mushrooms and cheese. The sweet one had maple syrup, cinnamon and brown sugar. Not the most attractive looking but definitely the most practical and delicious. Recipe below, like, share and enjoy the video below with your family and friends! Ingredients: - 4 matzahs - 2 tbsp. of butter. - 6 eggs - Splash of milk. - Salt + pepper. For Sweet: cinnamon, brown sugar and maple syrup. For Savoury: 1 onion, 1 cup of mushrooms or any vegetable. 1 cup of grated cheese. Method: - Soak matzah for 2 minutes in hot water. - Beat 6 eggs in a separate bowl and add milk. - Place butter in pan, followed by matzah and then eggs. - Cook as you would scrambled eggs (breaking up the mixture). · For Sweet: Add cinnamon, brown sugar and maple syrup. · For Savoury: Fry onions and mushrooms in pan, add matzah brei and grate cheese on top. - Good luck choosing between sweet or savoury!

Matzah Madness Ft ‘Becca's Matzah Crunch Recipe’. With #Pesach just around the corner, we will have a three part series of ‘Matzah Madness’ recipes that JewishCare staff want to share with you! The first is a delicious recipe by our Youth Services Social Work student that made mouths water. Who knew matzah could taste this good? A simple recipe, approximately 1.5 hours of preparation time, followed by hours of joy. We hope you like and share the recipe with your family and friends and enjoy the video below! Ingredients: • 4-6 unsalted matzahs • 1 cup (2 sticks) butter or margarine. • 1 (or 1.5) cups packed brown sugar. • 1 cup milk or dark chocolate chips or baking piece. • optional: white chocolate, vanilla extract, almonds, dark chocolate. Preparation: 1. Line baking sheets with tin foil as the recipe gets to be quite sticky. Place matzah on sheets ensuring you fill all spaces. 2. Preheat oven to 190(oven temperatures may vary). 3. In a non-stick pan melt the butter and add the brown sugar. Stir until the mixture is combined (if the butter is separating add more sugar and slightly reduce heat). Add an optional teaspoon of vanilla. Consistency should begin to look like caramel, you will know it's ready when it starts to bubble. 4. Pour caramel mixture onto matzah and spread out with spatula. Act quickly as the caramel begins to solidify quickly. 5. Place matzah in the oven for approximately 3 minutes or until the caramel begins to bubble. It is important to watch your matzah as you do not want it to burn. 6. Remove from heat and let sit for 30-60 seconds on the counter (caramel should begin to harden onto the matzah but still remain hot). 7. Place chocolate chips or pellets onto the matzah and wait one minute for them to soften before spreading. 8. Optional step: At this point feel free to add crushed almonds, dried cranberries, sprinkles, or other toppings to your matzah crunch. 9. Allow matzah to cool for 5-10 minutes and then place entire tray in freezer. 10. Optional step: Remove matzah from freezer after 10 minutes. Melt white or dark chocolate in pan and drizzle on top of matzah. 11. Remove matzah from freezer after 10-20 minutes and break into smaller pieces. Once broken store in a container in the freezer until serving (they taste best cold!) 12. Challenge: Try to eat just one – because they are that good!

JewishCare is a fantastic place to work and I recommend a visit to the Print35 shop when visiting JewishCare.

Long-time JewishCare volunteer and revered community member Efim Solovey – president of the Russian branch of NAJEX has been awarded the Orden Druzba Naridov (Medal of Friendship of Nations) by the Ambassador of the Russian Federation, Mr Grigory Logvinov.
The award was presented for Efim's extraordinary contribution to enhancing Russian-Australian relations. An indication of the significance of this event is that Efim is the first Australian to receive this award.
While being presented with the award 93 year old Efim stopped the proceedings and called out our Manager of Volunteer Services Lana Kofman to receive the award with him. Efim told the crowd that JewishCare was always there to support the Ex- Servicemen group and attend to all the needs of veterans and Holocaust survivors.
