I thought I would get Summer Queen finished up (the stitching portion) this weekend but the frog came to visit in a big way. I ended up having to frog almost her whole face. 😦 I was so upset that I couldn’t bring myself to stitch on her anymore once I discovered it (Thursday evening). Friday M and I went out to eat and it was late when we got home, so no stitching then either. I woke up early Saturday morning and spent a whole hour frogging her. Then I hit the shower, packed a bag and my car and took off up north.
I spent Saturday afternoon/night and Sunday morning with Melissa. I had originally intended on staying last weekend but those of you that follow her blog/facebook know she had a 13 hour day at work last Saturday. She had offered to help me with some computer issues (which I’ll talk about later).
I got there around lunch and she made us the best lunch! I re-joined Weight Watchers right before they made their big change and let me tell you I have never been so happy while trying to lose weight! It’s fun! And it’s even more fun when you’re around someone who’s as enthusiastic about it as you are. I think we spent the better part of our time together talking about cooking and Weight Watchers! Dinner was excellent too!
After dinner, and when we were thoroughly stumped by a computer issue, we headed over to Target to pick up a few things. One of the things I wanted was a cookbook she owned that had WW recipes in it. I made one of those recipes (Greek-Style Shrimp Saute) for dinner tonight and it was a success. 5 points per serving. The recipe in the link calls for 1 1/2 oz Feta. The WW book calls for 1/3 cup. I used non-fat instead of reduced fat Feta. Since it was served over orzo in the photo (no mention of that in the recipe) I went ahead and served it that way as well. There are a couple of things I made note of for next time:
Use shrimp that don’t have a tail. Make sure your shrimp is completely thawed (I realized mine wasn’t after I started cooking it and had to drain it). Find something else to serve it over besides orzo.
Using my WW scale I measured out 4 oz of orzo to cook since 2 oz is a serving. After it was cooked, and I weighed my portion, it came to 10 points. Now that wasn’t disasterous for me at this point because I have a lot of points left over today, but in the future that won’t continue to work. I’m going to grab a spaghetti squash tomorrow on the way home from work and try that. I can see you not serving it over anything and just adding some sides. It really tasted good to me.
Now back to those computer issues.
I will be moving my blog in a couple of weeks. I’ve already set it up (well, Melissa has already set it up) after much hair pulling, cussing, and nashing of teeth! 😆 I need to take care of something through my internet provider before I feel comfortable dropping this one.
