“We never live; we are always in the expectation of living,” as Voltaire observed as if to say “We live constantly looking towards an unrealized version of ourselves, or regretting that which we are not.”

Expectations, however, are a strange thing, being, in essence, a ‘guess’ (educated or otherwise) set against an entirely unknowable quantity – the future. Now, think of how often we hear of someone having ‘lost the expectation game,’ or how some product or person was ‘ultimately doomed by expectations that could never have been met.’ There is, of course, the opposite of this, of something or someone benefiting from a lack of expectations, and exceeding wildly because…well, because no one ‘expected’ success in the first place.

Entertaining guests, and seasonal gatherings, naturally, are not immune to this faux-psychic way in which we humans gauge the unknowable.

A lot of what I’ve been posting here recently centers around the ‘expectations’ of summer, be that your guests looking forward to the season’s grilled cuisine, or of that perennial fantasy of lounging about with precious ‘nothing to do’ on a humid summer afternoon. I, much like the chef who longs to dine easily, we had to take a break from ‘everything.’ To that effect, one of my ‘crew’ here had suggested taking a day and doing nothing out on the porch.

Naturally, I agreed. However, I would let that ‘low expectation’ of ‘a simple afternoon with coffee and tuna sandwiches’ be, and instead quietly exceed expectations, providing a delicious surprise in the process. Like Nero building his Domus Aurea with the intent of “Building a home worthy of a human being,” I fully intended on giving my crew “A day on the porch worthy of a Gourmet.” With that said, during my next supply run to Walmart, I picked up a few key items that I would need to do precisely that.

That, of course, is where today’s recipe comes in – Soy Grilled Tuna Steaks.

To start things off, we begin by preparing a quick marinade with the ingredients listed below and then adding in the tuna steaks. We then let the steaks marinade in the fridge for at least an hour, or preferably overnight.

Now, I do prefer Kikkoman® Traditionally Brewed Soy Sauce for that part of the recipe since aside from being a reliable quality soy sauce, it really helps bring out the umami taste, balancing and rounding out the other flavors that surround it.

From there we prep the grill, brushing the grate down with vegetable oil to ensure that the steaks don’t stick. Once that’s done it’s time to grill the steaks. Once the steaks are on the grill, you’re going to want to keep a close eye on them, since you’ll only be looking to grill for around three to five minutes on each side if you’re looking for rare steaks – longer only if you’re looking for more well-done steaks. The outside should be white and flaky, with those beautiful sear marks from the grate.

As the steaks come off the grill, dash them with a bit of olive oil, otherwise, they’ll begin drying up rather rapidly – like any meat. Unless you’re serving them straight away, you’ll also want to hit the tops with a little fresh lemon juice. After that, serve with some extra

Healthy Almond Joy Shake

Thank you to Almond Cow for sponsoring this post. All opinions expressed are mine.

These healthy Almond Joy Shakes are a cool and refreshing summer treat inspired by your favorite candy that is healthy and delicious!

“On days like these when skies are blue and fields are green” those cold, gray wintry doldrums and early Spring days feel like a dream- and at times I wonder how I managed through the short hours of sunlight, the bitter air, and endless mounds of snow. Looking upon the now lush and full hedges, chirping with the song and dance of sparrows and mourning doves; feeling the warm breeze that is laced with the salty sea and sweet floral that is in full bloom; I wonder, which is truly the dream.

I’m entranced by the beauty of summer to say the least, but as the saying goes, “If you look for perfection, you’ll never be content.” While my eyes are cast under the spell of Summer’s beauty, I find the rest of my body is not. The temperatures are risings, and that beautiful aforementioned breeze is a hot one, certainly offering no relief from the thickening humidity.

To complicate matters further, I have the strangest craving for something sweet; surely, however, I am not about to turn the oven on. Eager to return to my earlier state of summer bliss, it suddenly dawns on me that I have a cool jug of fresh almond milk in the fridge, frozen bananas, and a can of coconut milk that has now turned to cream after chilling for several hours. Ah yes, a healthy Almond Joy Shake will surely soothe my troubles.

I’m not one for big projects, but recently I was approached by the makers of Almond Cow Milk Machine, to see if I were interested in making my own almond milk.

I cannot remember the last time I actually had milk. I’ve been drinking almond milk and coconut milk now for years…before it was ‘Vogue’. So, yes, this sounds like something I would be very interested in. However, what really sealed the deal for me was the simplicity and ease of Almond Cow. It’s basically a two-step endeavor with minimal effort and cleanup. Step 1: soak the almonds. Step 2: transfer the almonds to the Almond Cow, add water, and let the machine take care of the rest in 30 seconds. I was absolutely on board with this idea!

I had the pleasure of trying out Almond Cow Milk Machine for myself and couldn’t believe how easy it was. And in case you were wondering, it is not only easier but also cheaper than store-bought. A few almonds will give you an entire carton worth of almond milk, and for the bag of almonds I have in the pantry, I can probably get 6 cartons worth of almond milk for that.

You can have a lot of fun with this machine and it doesn’t just stop at almonds. You can make cashew milk, coconut milk, and pecan milk. Check out the video below for ideas on how to flavor your milk as well and see for yourself just how easy it is to use.

Today’s recipe includes the homemade almond milk I made earlier this week, along with a few delicious added ingredients like frozen bananas, coconut, chocolate, and a drizzle of honey for added sweetness.

These shakes or soft serves, whichever you prefer are healthy, refreshing and inspired by one of my favorite candies- Almond Joys.

So whip one up for yourself and enjoy all summer long.

Cheers!

Let’s set the scene. Your family and friends are finally of one schedule, and your backyard, kitchen, or dining room is their singular seasonal destination. That, of course, leaves you the responsibility of filling their plates with something delicious, and their minds with a pleasant memory as a takeaway.

How best to do this?

Living the Gourmet: Give your typical tacos a refresh with warm flatbreads, a fresh tomato salad and Smiply Organic Mild Taco Simmer Sauce - a chef-worthy, richly seasoned sauce made with organic ingredients! #ad

On the one hand, you want to impress yourself as much as your guests, on the other, you really just want to some have some of that illusive summer fun that you’ve…well, that you’ve read so much about.

When I find myself in that sort of predicament, I have to recall something a professor of mine once told me, something that has forever morphed my view on art, and which in turn has led into what I do here on Living the Gourmet, and I paraphrase, “If you want ‘artistic fulfillment’ from what you produce, then find fulfillment in the enjoyment your work brings to others. Otherwise, what’s the value? Would the Odyssey have survived countless millennia if the Greeks had to convince themselves of Homer’s poetic worth? Of course not!”

The application of this mode of thought towards all things culinary couldn’t be more obvious. For example, for precisely the sort of summer afternoon that I opened with, when I think of a summer spread meant solely to please my guests, I think of something colorful, something fresh, something that’s ‘clean eating,’ and, ideally, something that uses organic ingredients. In other words, something as fresh and crisp as the season itself.

Naturally, that brings us to today’s homemade Chicken Tacos, prepared with Simply Organic’s Mild Taco Simmer Sauce for Chicken. Now, I do prefer using this simmer sauce in this particular recipe for a couple of reasons. First and foremost, is simply the quality of the product, second is that it’s a great time saver, especially for when you’re feeding a crowd, and since it doesn’t skimp on any of the hallmarks you would expect from quality Mexican cuisine.

Living the Gourmet: Give your typical tacos a refresh with warm flatbreads, a fresh tomato salad and Smiply Organic Mild Taco Simmer Sauce - a chef-worthy, richly seasoned sauce made with organic ingredients! #ad

To start things off, we begin by preparing the chicken marinade with the ingredients listed below, and then set the chicken in this marinade in the fridge for at least an hour, or ideally overnight.

Once that’s done, we heat a large cast iron pan or griddle, and we grill the chicken as directed below. You’re basically looking to achieve a beautiful golden color on the chicken, the cooking time for the chicken depends on the thickness to which you’ve sliced your chicken as explained in the recipe below.

After that, heat up the Simply Organic Mild Taco Simmer Sauce in the same pan we cooked the chicken in and place the cooked chicken in the sauce.

Once that’s done, it’s time for the fun part – assembling the tacos.

First things being first, for this particular recipe I’m using my homemade grape tomato salad, the recipe for which is below, along with cubed avocados, fresh Romaine lettuce, although you can use any of your preferred salad greens, and sliced radishes. I also like a twist of fresh lime in my tacos, but that’s optional.

“There is no talent in seriousness. Everyone can turn a vengeful eye to the rain, or give an account of the difficulty of their daily tasks, or curse the fleeting hours of the day well into the night. To make light of the gallows, however, and have one’s fellow sufferers laugh along, therein lies the work of genius.”

I’ve always tried to keep those sorts of sentiments in mind. To that point, I recall my school days in Manhattan, and how one afternoon I went to this very upscale restaurant with a group of my friends, and seated behind us was the typical ‘out to lunch’ stuffed shirt type. He was talking, rather confidently, about his exploits in France, and on the ‘proper way’ to serve wine, and the ‘adulterating effects’ of adding fruit or ice to one’s cup.

While this younger version of myself was initially, and quietly, quite impressed, I’ll never forget my friend’s reaction “That poor man’s never enjoyed cold sangria?”

Similarly, the Roman poet Horace entreats us to “Mix a little foolishness with your serious plans. It is lovely to be silly at the right moment.”

Summer is precisely the season for that sort of attitude, and for all the obvious reasons. Tis the season for grilling, sunshine, beaches, and parties, after all. The best part of this, of course, is that very little of the season’s fun is dependent on ‘special occasions,’ just the opposite in fact. For example, the very best excuse to invite a few friends over for a summer ‘anything’ is, well, no excuse at all.

If you’ve been paying attention here on Living the Gourmet, then you’re well aware that my most recommended drink for celebrations of ‘just because’ is a refreshing Prosecco, whether for a dinner party, just because, or simply out on the porch with the sunset. And today’s Riondo Prosecco fits that bill exquisitely, being a fun alternative to more traditional cocktails, or when something lighter than wine is the order of the day.

Let’s begin with some details for the uninitiated. Prosecco is an Italian white wine produced within the Prosecco DOC, which spans nine provinces inside of the Veneto and Friuli Venezia Giulia regions of Italy. For many the word ‘Prosecco’ has become – incorrectly – interchangeable with its sparkling incarnation ‘Spumante.’ However, Prosecco is also produced as a semi-sparkling wine or ‘frizzante,’ as well as still-wine ‘tranquillo.’ Though traditionally made from Glera grapes, several specific varietals may be blended into the wine during production, but these additions should not constitute more than about fifteen percent of the resulting wine.

However, the real strength comes in versatility, and the accessibility of a price point that encourages experimentation. For example, if your guests are over for a sunbaked backyard gathering, why not go ‘Italian for Summer’ and combine some crushed ice, zested lemon wedges, sliced cherries, a bit of mint syrup, and mint leaves for garnish, and you’ve got yourself a ‘Prosecco Sangria.’ Can you think of a more perfect summer beverage? Take that you nameless ‘stuffed shirt type’ from four paragraphs up.

Living the Gourmet: Pork Parmigiana featuring Riondo Prosecco - This classic Italian recipe is served alongside a bubbly glass of Riondo Prosecco for an unforgettable meal! #RiondoProsecco #ItalianForsummer #ad

However, remember that Riondo Prosecco makes those quiet summer dinner parties a bit more bubbly as well, which is where today’s recipe comes in – Pork Parmigiana with Fresh Tomato Sauce. Now, I know what you’re thinking – heavy-ish entrée equals a hearty red. Usually, you would be right. But imagine a humid summer night, clear with a veil of stars overhead, and you want to put the weather and your porch to the fullest use – together. Now, for that sort of night, you want something light, something refreshing, something to add ‘zest’ not only to the meal but also to the atmosphere. You want to be relaxed from start to finish. That means pairing the wine not only to the meal but the atmosphere and setting as well, and once again, that’s where the Riondo Prosecco comes in.

To start things off, we begin by setting up three shallow bowls. Yes, we’re about to get messy. Set up one bowl with flour, another with an egg wash, and the third bowl with breadcrumbs. We then dredge the pork chops first in the flour, the in the egg wash, and finally in the breadcrumbs. Once that’s done heat a heavy cast iron frying pan with about a quarter of an inch of vegetable oil, and then fry the chops as directed below. The cooking time here depends on the thickness of the chops, but in essence you’re watching for a beautiful golden color on each side as depicted below, and for the juices of the chops to run clear. Once both of those qualities have been achieved the chops are done. You want to be careful not to overcook.

For the Fresh Tomato Sauce:
  • 6 boneless pork chops – you may cut them in half to make ¼ inch chops
  • 2 eggs plus a splash of milk
  • 1 cup of flour
  • Italian style breadcrumbs – if you only have plain add a little dried oregano, salt, and black pepper to the bread crumbs
  • Vegetable oil for frying
  • Fresh Asiago or Parmesan cheese – for grating
  • 4 pints of grape tomatoes
  • 5 cloves of garlic – chopped
  • 1 tbs. capers plus a tbs. of caper juice
  • 6 – 7 fresh basil leaves and extra for serving – ripped
  • Pinch of sugar
  • 1 tsp. salt
  • 1 tsp. black pepper
  • ½ tsp. red pepper flakes
  • 1 ½ tsp. dried oregano
  • ¼ cup red wine
  • 2 tbs. olive oil
  • 2 tbs. butter
  • 1 lb. of your favorite pasta, prepared as directed with well salted water

Instructions

For the Pork:
  1. Set up three shallow bowls; one with the flour, one with the egg wash and one with the breadcrumbs.
  2. Dredge the pork chop first in the flour, then dip in the egg wash and finally dip in the breadcrumbs.
  3. Heat a heavy cast iron frying pan with about ¼ inch of vegetable oil. Place the pork chop in the pan and when one side gets a beautiful golden color carefully turn over and finish cooking. The cooking time will depend on the thickness of the pork chop. The juices should run clear when the pork chop is cooked properly. Do not overcook though, the meat will be dry and unenjoyable.
  4. Heat a large cast iron griddle and place the tomatoes on the hot griddle; sprinkle them with a dash of salt and let them char and slightly pop open.
  5. Heat a large cast iron frying pan with the olive oil and butter. Add the charred tomatoes to the pan and the seasonings. Move the tomatoes around in the butter, oil and seasonings to coat the tomatoes with the seasonings. Add the garlic, wine, capers, caper juice and the basil. Add the grated cheese and a quarter to half a cup of the pasta water to the sauce and place on a gentle heat for about 12 – 15 minutes.
  6. Place the pasta in a serving bowl prepared with a drizzle of olive oil, dashes of dried oregano, red pepper flakes, fresh grated cheese and toss; top the fresh tomato sauce and torn fresh basil leaves.
  7. Plate the pork chop and top with the fresh tomato sauce. Serve with fresh basil leaves and fresh grated cheese.

For the tomato sauce, to start things off…alright, I can’t resist. If you’re a regular reader of Living the Gourmet then you know where we ‘start things off’ by now. Say it with me…Heat The Cast Iron! In this case, we’ll be utilizing both the cast iron griddle and the frying pan, the griddle for charring the tomatoes, while we meanwhile prep the frying pan with olive oil and butter. About here you’ll want to prepare your pasta water – with a generous dash of salt, since this will be important a bit later. Once the tomatoes are charred, add them into the frying pan along with the listed seasonings, and stir them about in the butter and oil to coat them in the seasonings.

Once that’s done, add in the wine, the capers, caper juice, and the basil, and then the grated cheese along with a quarter to a half a cup of the pasta water and let that rest on a gentle heat for about ten to fifteen minutes. Here you can prep your desired pasta as directed.

Now, here things begin to come together, as we can finally plate the pasta with the sauce, topping it with a drizzle of oil and freshly grated Asiago, some red pepper flakes, a dash of black pepper, and a garnish of basil because let’s be honest, we’re all pretending to be the chef from Burnt and that our guests are Michelin judges. Or maybe that’s just me…

Mediterranean Lentil Salad

This post is written in partnership with Reese Specialty Foods. All opinions expressed are mine.

Indulge on hot summer nights in this cool and easy Artichoke and Lentil Salad featuring Reese Hearts of Palm.

Confucius advised that “Wherever you go, you ought go there with all your heart.”

To that point, there is an all-encompassing quality about the idea of a good meal. From scenes of feasting and overly detailed descriptions of food in the Iliad to the idea of ‘Viking heaven’ being essentially an oversized catering hall with swords in the Icelandic ballads, ‘culture’ is shaped as much by how we sustain ourselves through food as it is by literature, music or even war.

To understand why this is, we need not delve into any comparative cultural studies, instead, we need only look at our own lives. Whether it be childhood memories of holiday tables or the peaceful quiet of a summer night’s meal, it’s not difficult to see why the cliché of the kitchen is the ‘heart of the home’ has such traction – because it’s largely true.

Aside from the sweeping epics and ‘big events’ of our lives, moments at a table etch preciously brief ‘visions’ into our hearts. Whether it was studying how my grandfather opened peach pits with his knife or noticing for the first time the familiar similarities in thought and manner between uncles you once thought were different as night and day, the table and its meal is the staging ground for such memories.

Why do I bring this all up? Naturally, because I poured a fair few ‘hearts’ into a salad I prepared recently for my post-Fourth of July luncheon – hearts of palm, that is.

You see, I wanted to create something light but still satisfying, and something that was equal parts refined, healthful, and rustic. While I had never used hearts of palm before – at least that I can remember – I noticed the Hearts of Palm offer from Reese Specialty Foods, whose artichoke hearts have been a staple in my pantry for years, since Reese products are Non-GMO Project Verified and rich in potassium. I figured why not give them a try.

After all, what better time to experiment than in the lazy aftermath of a busy Fourth of July?

This, of course, brings us to today’s recipe – Mediterranean Lentil Salad.

To start things off, we begin with sixteen ounces of dried lentils, which we sift thoroughly, then rinse and drain – also thoroughly. Next up, we heat a large saucepan with olive oil and chopped garlic, allow the garlic to become slightly fragrant and then add in the lentils and toss. We then add four cups of water to this, along with the seasonings listed below, and let this come to a simmer. Once the simmer has been achieved, lower the heat, and let the lentils absorb the water, tossing from time to time; at which point you turn off the heat and leave loosely covered.

While the lentils cool, quickly grill up a red onion, either in a cast iron frying pan or ideally on a griddle. After the lentils have finished cooling, add in the Kalamata olives listed below, along with the onion, basil, chopped parsley or fresh cilantro, Reese Tender Small Artichoke Hearts and the Reese Sliced Hearts of Palm and toss gently. At this point, you’ll want to prepare the dressing as directed below with lemon juice, honey, salt, and black pepper.

[mpprecipe-recipe:516]

Now you serve the salad over a bed of fresh spring greens, topped with fresh avocado chunks, and top with feta cheese and a drizzle of the dressing. While I opted for the ‘Sliced’ hearts of palm variety for today’s recipe, they also available in ‘Select,’ ‘Pieces,’ and ‘Marinated,’ making them super versatile.

And just like that, you’ve got authentic bistro-style Mediterranean flavor perfect for a balmy summer afternoon.

Don’t forget to check out Reese on the Ibotta app to earn rebates on Reese products.

Enjoy with Love!
