I wonder if the Spega yogurt was regional? It's unfamiliar to me. That said, I *have* tried both St. Benoit and Trader's Point Creamery yogurts from the Whole Foods near me, and you're absolutely right: lovely (keepable) jars!

I've started to just push the garbage over the top lip of my cutting board with a bench scraper so it falls an inch or so to the counter. Then I scrape it all into the trash after I cook. (Your way sounds much more elegant.)

I actually wonder if one of the reasons I have so many is that I have divided storage columns above my oven where all my sheet pans live easily. (They slide in and out beside my cutting boards, pizza stone, cooling racks, etc.) I think if I didn't have that particular storage area, I might cut back. They do take up space!
