We recently attended the Baisakhi Food Festival that was organized by The Taj. Organized on the first floor, by the pool and under the stars, the festival offered an incredible menu with a dash of rustic fun in the form of sugarcane juice, chaat, golgappas and best of all, the 'Barf da gola" (Ice Candy). We were greeted and served by the ever smiling and ever caring team led by the incredible masterchef Chef Yogesh from Dera, who turned this evening into a journey through authentic Punjabi cuisine that was uniquely planned for this event. Spread over 10 days, every single day boasted of a completely different menu. Besides the chaat, sugarcane juice etc, we were served lip smacking Rajma Mint seekh kebabs and Paneer Tikkas. We're vegetarians so I can't say for the non-vegetarian fare really but I'm sure it was finger licking awesome as well. The main course began with the incredible Tamatar Tulsi ka Shorba. Now, those of you reading this as "Tomato Soup" couldn't be farther away from the truth. Yes it was tomato shorba (soup) but, it tasted completely opposite to the regular acidic fare that we know as tomato soup. My Mom, an excellent chef herself, prepares the exact same kind of tomato shorba. Made from fresh tomatoes and with a hint of tulsi, the Tamatar ka shorba was beyond awesome. Taj never fails to impress. Last time around, the Imli Sorbet was an incredible takeaway for me and this time, the shorba was killer! On to the food, the fare included two kinds of rice, a biryani and a corn rice with yellow dal and several other dishes that i was too busy eating, to remember the names. The salads included a samosa salad which was unique and awesome. The tawa arbi masala, cooked right infront of the guest was beyond awesome as well. It had shades of sweet, spicy and was delicately spiced, so as not to burn a hole in your palette. For those observing Navratri, there was a separate menu with several options as well. Last of all, desserts included many things like pinni ke laddoo, shahi tukra etc. All in all, a thoroughly unique Punjabi fare from the incredible Chef Yogesh. Great job guys!
